Mascarpone Strawberry Shortcake


The other day I tried something new! I cleaned and sliced a large basket of strawberries. I added about 1 Tbsp. of sugar and allowed them to macerate for about an hour. In my mixer I added about 1/2c. mascarpone cheese with the strawberries, juice and all, and whipped them up. I served this over buttermilk biscuits and garnished with fresh basil. A fun twist on an old classic.

Ricotta Orange Pound Cake

This recipe is from Giada de Laurentiis (I made it last weekend and it was amazing!! I used the strawberries we picked fresh from the farm)
1 ½ c. cake flour
2 ½ tsp. baking powder
1 tsp. kosher salt
¾ c. un salter butter at room temperature
1 ½ c. whole milk ricotta cheese
1 ½ c. sugar
3 large eggs
1 tsp. pure vanilla extract
Zest of 1 orange
2 Tbsp. Amaretto
Strawberries cleaned and sliced

Preheat oven to 350. Grease a 9x5x3 inch loaf pan.
In a medium bowl, combine the flour, baking powder, and salt. Stir to combine.
With an electric mixer, cream together the butter, ricotta and the 1 ½ c. sugar until light and fluffy, about 3 min. Add the eggs one at a time, beat until each is incorporated before adding the next. Add the vanilla, orange zest and Amaretto and mix. Add the dry ingredients a small amount at a time and beat just until incorporated.
Pour mixture into a buttered loaf pan and bake until toothpick comes out clean. About 45-50 minutes. Let the cake cool about 10 min and then turn out onto a wire rack to cool completely.
Slice and top with fresh strawberries and whipped cream, I added a fresh basil leaf for garnish. It’s amazing!!

Trader's Delight

OK, Trader Joes did it again – they suckered me in with their sample station!!! You MUST try this – it’s amazing!
Trader’s French Toast (in the freezer section)
Mascarpone Cheese
Trader’s Fresh Strawberry Preserves
Heat up the French Toast (I highly recommend NOT microwaving them), spread on the mascarpone cheese and then the fresh strawberry jam and enjoy! It’s delightful. I even served it for dessert last night!

Strawberry Bruschetta

(I know it’s not served on bread and not really bruschetta, but it’s the same preparation for my tomato bruschetta, so that’s the name!)
I had this in Italy several years ago and made it last night as a side dish. It’s amazing!
Dice up some fresh strawberries, julianna some fresh basil, add a dash of olive oil, balsamic vinegar and a tough of salt. Toss it together and serve it on the side as a fresh new side dish to your dinner.

Spinach, sliced strawberries, cut up fresh mozzarella cheese (or feta or goat cheese), candied pecans and the real star is the dressing – Brianna’s Home Style Blush Wine Vinaigrette (there is a big strawberry on the bottle).
