Sweet & Spicy Peacans
What Does Joe Know? He knows these yummy peacans!
They are awesome on salads or snacking or in this delicious carrot slaw:
shredded carrots
dried cranberries
plain Greek yogurt
juice from an orange
Trader Joe's Sweet & Spicy Peacans
Amounts will vary according to how much you want to make - but for the dressing, combine about 1/2 c. yogurt with 1/4 c. juice from an orange. Wisk together and pour over carrots, cranberries and peacans. I like to add a little orange zest too. A wonderful new take on an old time slaw!

Trader's Delight
OK, Trader Joes did it again – they suckered me in with their sample station!!! You MUST try this – it’s amazing!
Trader’s French Toast (in the freezer section)
Mascarpone Cheese
Trader’s Fresh Strawberry Preserves
Heat up the French Toast (I highly recommend NOT microwaving them), spread on the mascarpone cheese and then the fresh strawberry jam and enjoy! It’s delightful. I even served it for dessert last night!

Lentil Quesadillas
Hmmm… sounds like something I’d ever make let alone eat! But I was cruising through Trader Joe’s the other day and their little sample stand was handing this out and I quickly became a believer and bought all the ingredients!
Take Trader’s steamed lentils, heat them up with a little Trader’s Salsa Verde. Spread on a corn tortilla with some cheese on top and crisp up in a pan. It’s easy and amazing!

Trader Joe's Mandarin Chicken with Jasmine Rice
It's been one of those weeks! Not much cooking has gone on around here, last night was no exception! Trader Joe's Mandarin Chicken (frozen section) was super good and I'll buy it again. Jasmine rice makes all the difference in the world (as opposed to regular white rice).

Snack Dinner
This is one of my favorites! As a child, I remember coming home from the beach exhausted and sandy. We’d jump in the showers and when we got out, my mom would have “finger foods” made and we’d watch The Muppet Show before crashing! I loved the frozen egg rolls, mini pizzas… Now as an adult, I love to have what we call “Snack Dinner.” Trader Joe’s provides some delicious frozen snacks, I make a few myself to add to the mix and we’re good to go!
