If you haven't tried these, you must! They are the best chocolate chip cookies!
1 c. butter at room temperature
1 c. sugar
1 c. brown sugar
2 eggs
1 tsp. vanilla
2 c. flour
1 tsp. baking soda
1 tsp. baking powder
2 1/2 c. oatmeal
1/2 tsp. salt
12 oz. chocolate chips
Measure oatmeal and blend in a blender until fine powder. Mix together all dry ingredients. Cream the butter and sugars. Add eggs one at a time and vanilla. Beat in the dry ingredients. Add chocolate chips. Roll into balls and place two inches apart on a cookie sheet. Bake at 375 for 10 minutes. (I usually only bake them 8-9 minutes depending on your oven. They do not get really brown, so don't wait for that!!! They'll be too dry.) Makes about 5 dzn.

Mommy Girl’s Kitchen Sink Cookies
1 ½ c. flour 1 tsp. baking powder
1 tsp. baking soda
½ tsp. salt
¾ c. unsalted butter
¾ c. granulated sugar
¾ c. light brown sugar
2 eggs
1 tsp. vanilla
1 c. Ghirardelli bittersweet chocolate chips
½ c. butterscotch chips
1 ½ c. old fashioned rolled oats
1 c. flaked coconut
½ c. chopped nuts of choice (optional)
Cream together butter and sugars. Add one egg at a time and vanilla and beat. In separate bowl combine the flour, baking powder, baking soda and salt. Slowly add to butter mixture and beat together. Fold in the remaining ingredients. Bake at 350 for 12-16 minutes (it depends on how big you make them!).
