Reuben Panini

Not Sure what to do with your left over corned beef?
Rye Bread, Thousand Island dressing on one piece, homemade
mustard on the other, corned beef and Swiss cheese in the middle, press in the Panini
until hot and toasty!

Sloppy Joes

A friend had us over for Sloppy Joes the other night and it was a great flash back! My mom was known in our neighborhood growing up as the Queen of Sloppy Joes!!

Sautee some chopped onions and ground beef with some S&P. Add some catsup, brown sugar, mustard, worcestchire sauce, and perhaps some chopped bell pepper. (My girlfriend adds a can of Chicken Gumbo soup! It’s awesome!). Simmer on low until everything is sloppy and yummy! Serve on hamburger buns with some good old potato chips on the side!

BBQ Beef Sandwiches

Another holiday tradition for me is making these easy, crowd pleasing sliders! Get a beef roast (any kind will do) and cook it all day in a crock pot with just salt and pepper. After it falls apart, pull it apart and place it in a pan on the stove to cook it some more! I make my mom’s sticky sauce: brown sugar, catsup, mustard, and worchestshire sauce. Cook it on low, adding some water as needed. If it needs more sauce, I add some bbq sauce as well. Cook for about another 1-2 hours. I serve it on Hawaiian rolls with some shredded cheddar cheese. This is great to feed a crowd for the holidays.

Sausage & Peppers

Another tradition I have (I told you my family is CRAZY on traditions!) is to make sausage and peppers when we come home from getting our Christmas tree. I’ve always thought it was festive because of the red and green peppers! I grill brats, sauté green and red bell peppers with onions and served on a toasted, lightly buttered hoagie roll with mustard.

Make Your Own Sandwich

Sandwiches, they’re not just for lunch! I love to buy a bunch of fresh cold cuts and let the kids assemble their own sandwiches. I find they are more likely to try new things when they make it themselves! Plus, I love that there are no pots and pans to clean up!
